Value-added products

Add curing and smoking to your processing order when you want those flavors in the cuts you’ll use. These are value-added options for every species we process. Tell us which cuts you have in mind before we start so we can discuss the product and the work involved.

Plan the product before we start

Tell us the species, cuts, quantity and whether the meat is for personal use or sale. We’ll go over the product options, ingredients, charges and expected timing for that order. Don’t assume every cut or recipe takes the same work.

For hog, lamb, sheep and goat slaughter orders, allow up to two calendar weeks from slaughter when smoked items are included. That is an estimate, not a guaranteed pickup date. Incoming meat and other species need their own timing arrangements.

Bringing meat for further processing?

Call before you bring it. We take in red meat for curing and smoking, either as an inspected product or as a custom-exempt order. If you want an inspected product, the meat you bring has to be USDA-inspected. It has to be within its shelf life, and further processing doesn’t reset that. We don’t take deer or other wild game.

Check the cooking directions

Cured or smoked does not mean fully cooked. Follow the package directions for the product you receive. Tell us about ingredient or allergen concerns before we finalize the order.

Slicing

We mostly slice red meat. Tell us how you plan to use it so we can discuss suitable options. We don’t offer deli-thin slicing.

Common questions

Do you offer fully cooked products?

We’re still reviewing which fully cooked products we can offer for custom-exempt orders. Check with us before planning your order.

Do you offer curing and smoking?

Yes. Curing and smoking are value-added options for every species we process. Tell us what you want when you place the order and we'll go over what we can make. Cured or smoked doesn't mean fully cooked — check the package and cook it as directed.

How do I check ingredients or allergens in a cured or smoked product?

Ask us about the exact product before you finalize the order. Seasonings and other additions can change what's in a cured or smoked product. Don't go by the product name alone — it won't tell you what's in it.
