Choose flavors before we start

Put your preferred flavors in order and specify how much meat goes to sausage on your cut sheet. We start making sausage as the first hog is cut, so we don’t stop partway through to call for flavor choices. Remaining trim comes back as raw, unseasoned grind.

Match the flavor to the batch size

  • Pork and accepted beef: 25 pounds per flavor, or 30 pounds for Garlic Pepper.
  • Other species: 30 pounds per flavor, or 35 pounds for Garlic Pepper.

These are meat batch sizes, not animal live weights. For rabbit orders, grinding, sausage and links also have a separate 50-pound processing minimum. We can go over that with you when you plan your order.

Choose bulk, links, rope or patties

Flavor charges are per batch. Grinding costs extra. Bulk chubs or vacuum-sealed bulk sausage have no additional form charge; links, rope and patties have separate per-pound charges. Include the recipe, grinding, form and any additions when working out the cost.

You can add cheese, jalapeño flakes, sage or crushed red pepper. Tell us about ingredient restrictions before you finalize the order. A flavor name — even ‘no added sugar’ — won’t tell you everything that’s in it, so ask us if you need to avoid something.

Bringing meat for sausage?

Call before delivery so we can plan the batch and receiving arrangements. We accept USDA-inspected beef trim for sausage while it is still within its shelf life. Reprocessing does not give meat a new shelf life. This is further processing of meat you bring in, not slaughter. We don’t take wild game.

Common questions

What are the sausage batch sizes?

Each sausage flavor is made in a batch. Pork and accepted USDA-inspected beef use 25-pound batches, or 30 pounds for Garlic Pepper. Other species use 30-pound batches, or 35 pounds for Garlic Pepper. Before choosing flavors, confirm the total meat required for your species and order.

Will you call me to choose sausage flavors after cutting?

No. Put your flavors, in order of preference, and how much meat goes to sausage on the cut sheet before we start. With hogs, sausage is made as the first hog is cut, so we can't stop and call partway through.

What happens to leftover sausage trim?

Meat left over after your planned sausage batches comes back as raw, unseasoned ground meat.

Can I bring inspected beef trim for sausage?

Yes. We take USDA-inspected beef trim for sausage as long as it's still within its shelf life. Call before you bring it so we can plan the batch. Reprocessing doesn't give the meat a new shelf life.

Do you offer fully cooked products?

We’re still reviewing which fully cooked products we can offer for custom-exempt orders. Check with us before planning your order.

How do I check ingredients or allergens?

Ask us about the exact product before you finalize the order. Seasonings, cheese, casings and other additions all count. Don't go by the flavor name alone — it won't tell you what's in it.
