Confirm the processing date before selling Thanksgiving turkeys. Then work backward to poult arrival and forward to customer pickup, cold storage and thawing time.
For this Thanksgiving, plan around the flock you already have; work through poult timing separately for next season.
Take reservations by an expected finished-weight range. A live-weight estimate is not the weight customers will receive, and a reservation should not promise an exact carcass weight.
Match the growing calendar to the turkey type
Heritage varieties and broad-breasted production turkeys have different growth patterns and production considerations. Do not take a date from one type and apply it to another. Use information for the actual stock and your farm’s records to establish a likely window. Penn State turkey comparison.
Ask the hatchery for the information needed to plan, then monitor the flock rather than treating the first estimate as a guarantee. If you have no previous turkey records, leave room for uncertainty in the customer promises you make.
Confirm processing before promising pickup
Check appointment availability before committing to a holiday pickup date. Discuss the flock count, approximate age and expected size with Underground Processing well in advance. The poultry fee schedule considers more than species alone, so review the current terms for the actual order. Underground Processing poultry processing.
Put catching, transport and product pickup on the calendar too. If your customers will collect from the farm, allow for your own trip to the plant and the storage arrangements after you return.
Selling the birds also requires the appropriate processing and sales pathway. Make that decision before advertising holiday inventory.
Work backward from the customer’s meal
For a frozen turkey, refrigerator thawing takes time. USDA’s safe-thawing guidance estimates at least 24 hours per five pounds for a large frozen item. Keep the refrigerator at 40°F or below. USDA thawing guidance.
For example, a customer collecting a large frozen bird the evening before a holiday may not have enough refrigerator-thawing time. Communicate whether the turkey is chilled or frozen and direct the customer to the complete safe-thawing instructions when arranging pickup.
Keep a reservation record with the customer’s preferred range rather than promising that every bird will finish at an exact weight. After processing, use actual package weights for the allocation and final communication.
Review the season afterward
Keep growing dates, finished weights, processing costs, requested size ranges and unsold birds in one season record. Use that record to adjust next year’s flock size and reservations.
