Before you plan transport or promise customers a pickup date, confirm your processing appointment with Underground Processing. Tell us the species, count, approximate size, preferred dates and whether the meat is for your household or for sale.

Know the deposit

Animals brought for slaughter Standard deposit
Hogs, lambs, sheep and goats $55 per animal
Poultry $2 per bird

Two hogs require a $110 deposit; forty chickens require $80. These are deposits, not full processing prices. An administrator may approve a waiver or a lower customer-specific deposit. The table does not set a deposit for meat brought in for further processing.

Paying or calculating a deposit does not establish availability by itself. Keep the office’s appointment confirmation with your order.

If your plans change

Change Deposit treatment
Cancellation with at least 28 days’ notice May be refunded or credited toward another booking
Cancellation inside the 28-day notice period Forfeited
No-show Forfeited
Simple reschedule Can transfer to the new appointment; confirm with the office

A reschedule request does not reserve another date or override late-cancellation forfeiture. Contact us promptly with the original date, species, count and requested change—including any change to the animals or work involved.

Have the cutting sheet ready

Completed instructions are due before processing day or at drop-off. Email them to scheduling@undergroundprocessing.com or deliver them at the plant. There is no charge simply for submitting a completed sheet at drop-off.

Need help filling it out? Arrange that before drop-off day. Staff are busy receiving animals then; do not plan on buying day-of assistance by paying a fee.

Work through these choices in advance:

  • Cuts you want to keep and package sizes you will use.
  • Sausage flavors in priority order and the meat allocated to them.
  • Organs, bones, fat and other items you want saved.
  • Agreed instructions among owners sharing an animal.

Blank-section defaults are not settled, so complete every applicable choice. Underground Processing starts sausage production as the hog is cut and does not call afterward to decide where the trim should go. Review the sausage options before finalizing the sheet.

Plan delivery and pickup separately

The hauler needs the confirmed appointment and final order information. The person collecting meat needs the agreed pickup time, clean insulated containers and storage space at home. Processing and freezing take time; a deposit does not guarantee a particular completion date.

Keep one final copy of the instructions, appointment and accepted changes. Review the relevant pork or poultry charges alongside the deposit so you can plan the whole order.
